Megan's Sweet Potato Hash

The fastest way to eat enough vegetables is to serve them w/ breakfast.
Ingredients

2 Tablespoons olive oil

2 large sweet potatoes, diced

½ red onion, diced
-
1 jalapeno, sliced

8 oz mushrooms, diced

2 tablespoons Organic Cajun Seasoning

½ avocado, sliced
Directions
Preheat your skillet or griddle to medium high heat, add olive oil.
Add sweet potatoes & cook for 5-10 minutes, flipping once.
Add onion &/or jalapeno. The ingredient you want to be more pungent should be added last. Cook until transluscent (2-3 minutes).
Add mushrooms & cajun seasoning. Cook for another 5 minutes.
Serve topped w/ fresh avocado.
