Instructions

  • 1.Melt butter and chocolate in a double boiler.
  • 2.While the chocolate is melting, beat 1/8 cup sugar with egg whites in a medium bowl until stiff.
  • 3.In a separate bowl, beat remaining sugar with heavy cream.
  • 4.Remove melted chocolate from heat and beat egg yolks into the mixture.
  • 5.Add vanilla, cinnamon and cayenne. Stir until well blended.
  • 6.Fold egg whites into chocolate.
  • 7.Fold whipped cream into chocolate.
  • 8.Spoon into wine or martini glasses.
  • 9.Refrigerate until chilled.
  • 10.Remove from fridge and garnish with fresh mint sprigs (and more whipped cream if you like).
  • 11.Stays good for a day or two, but it won't last that long!

  • 4 ounces bittersweet chocolate
  • 2 tablespoons butter
  • 1/2 teaspoon vanilla extract
  • 3/4 teaspoon organic ground cinnamon
  • 1/8 teaspoon organic ground cayenne
  • 3 eggs, separated
  • 1/4 cup sugar
  • 1/2 cup heavy cream
  • fresh mint for garnish (looks so pretty, and freshens the breath!)
