This is a great fall cookie recipe – with molasses, cinnamon and ginger, it will leave an amazing spice-filled aroma in your house. The secret to these cookies (other than the frosting)? Be sure to make your dough a day ahead and let chill overnight.
.Mix sugar, and molasses in hot water.
.Stir in melted shortening.
.Sift together dry ingredients in a large bowl.
.Add the sugar and molasses mix into the dry ingredients. Thoroughly mix.
.Divide dough into two.
.Roll out 1/4-inch thick on floured surface.
.Cut into round cookies (a drinking glass works well as a cutter).
.Bake at 375° for 8-10 minutes on greased cookie sheet.
.Mix icing ingredients together.
.Frost cookies with lemon icing once they have cooled.
