Roasted Asparagus Spears with Curry Dip

Instructions

  • 1.Preheat oven or grill to 400°F.
  • 2.Drizzle asparagus spears with olive oil and sprinkle with kosher sea salt.
  • 3.If cooking in the oven, roast for about 20 minutes, or until nice and crispy.
  • 4.If grilling, cook for 6-10 minutes with the lid closed, until tender and crisp. Be careful not to overcook, or the spears will get soggy.
  • 5.Meanwhile, thoroughly mix mayonnaise, yogurt, curry powder, and horse radish for dipping.

  • 1/2 cup Greek yogurt
