Southwestern Salsa (AKA Cowboy Caviar)

Not your traditional spicy salsa, it really is a Cowboy Caviar. The taste-takeaways? Vinegar and cumin intertwine with the black-eye peas and avocado. Topped on lightly-salted corn tortilla chips, this is the best. Yee haw.

Instructions

  • 1.Combine all prepped ingredients in a bowl. Stir.
  • 2.Serve with corn tortilla chips.
  • 3.Note: Plan to make within a couple hours of serving. Really only good for one day.

Ingredients

  • 2 avocados, diced
  • 1 tomato, diced
  • 11 oz. corn, one can drained
  • 15 oz. black-eyed peas, one can drained and rinsed
  • 2/3 cup cilantro, chopped
  • 6 green onions, chopped
  • 1/4 cup olive oil
  • 1/4 cup red wine vinegar
  • 2 cloves garlic, minced
  • 1 teaspoon organic ground cumin
  • 3/4 teaspoon fine sea salt
  • 1/2 teaspoon freshly ground organic black peppercorns
  • 1 teaspoon lemon juice
