Summer Salad with Strawberries and Candied Pecans

When you’re looking for a refreshing side to cool you off in the heat of the night, here’s a super simple, summery, light salad. Pick your favorite mixed greens – with herbs if you like– to combine with red onion, strawberries and candied pecans. Flavors that play so well off of each other – the tiniest heat, and a little sweet.

 

Instructions

  • 1.Combine dressing ingredients in a dressing shaker. Cover and shake to combine.
  • 2.In a large bowl, combine mixed greens, red onion, cucumber, strawberries and candied pecans*.
  • 3.Add dressing to taste. Toss and serve immediately.
  • 4.* To candy your pecans, mix 1-1/2 tablespoons of brown sugar, 1/2 teaspoon cinnamon, 1/8 teaspoon cayenne in a skillet with a 1/2 tablespoon of water. Heat until sugar is mostly melted and add pecans. Once the caramel begins to stiffen, remove from heat. Remove nuts from pan and let cool.

Salad Ingredients

  • 5 cups mixed greens, loosely packed
  • 1/2 pint of strawberries, hulled and thinly sliced
  • 1/4 red onion, thinly sliced
  • 1 cucumber, peeled and thinly sliced
  • 2 tablespoons candied pecans, roughly chopped

Dressing Ingredients

  • 1/4 cup extra virgin olive oil
  • 1/4 cup honey
  • 1/4 cup apple cider vinegar
  • 1/4 cup Dijon mustard
  • 1/2 teaspoon sea salt
  • 1/4 teaspoon freshly ground pepper
