Truffled Snow Pea Salad with Parmesan

That’s right. Snow Pea Salad (not Snap Pea Salad), for a fresh take on a summertime side. It’s earthy and organic, with the muskiness of black truffle adding a bit of decadence. Be sure to use fresh, fresh snow peas.

Instructions

  • 1.Soak julienned snow peas in ice water for 10 minutes.
  • 2.Drain snow peas, and pat dry.
  • 3.Meanwhile, combine mustard, shallots and vinegar in a mixing bowl with a whisk.
  • 4.Sprinkle with truffle sea salt, and drizzle in olive oil and while whisking.
  • 5.In a second bowl, combine cheese, parsley and peas.
  • 6.Toss the peas lightly with the dressing and season with salt and pepper.

Ingredients

  • 1 lb snow peas, julienned (sliced lengthwise)
  • 1/4 cup fresh parsley
  • 1/4 cup grated Parmesan cheese
  • 1 shallot, minced
  • 1 teaspoon Dijon mustard
  • 2 tablespoon Champagne vinegar
  • 7 tablespoon extra virgin olive oil
  • 1 teaspoon black truffle sea salt
  • Salt and organic black pepper, to taste
