Our Coriander Fennel Rub was built for fish. Bright coriander, sweet fennel, a touch of oregano and a little heat from red pepper flakes cut through the richness of salmon. Brush with olive oil, sprinkle on the rub and broil until golden. Dinner is ready in about 25 minutes. Serve with our Roasted Sweet Potatoes for a matching meal. Prefer something lemony? Try the Lemon Dill variation below. Gluten-free and dairy-free.

Broiled Salmon with Coriander Fennel Rub

Ingredients

  • 2 lbs salmon fillet, skin on
  • 2 tablespoons olive oil, plus more for the baking sheet
  • 1 tablespoon Organic Coriander Fennel Rub

Directions

  1. Position an oven rack about 8 inches away from the broiler element and heat the broiler to high.
  2. Coat a large rimmed baking sheet with 1 tablespoon of the olive oil. Set the salmon skin side down on the sheet, drizzle with the remaining oil and sprinkle evenly with the Coriander Fennel Rub. Let sit for 10 minutes.

  3. Broil until the top is browned and the salmon flakes easily with a fork (145°F), about 10 to 13 minutes.

  4. Remove from the oven and serve.
