Cashew Cucumber Dip with Lemon Dill Seasoning

Ingredients
For Cashew Cream

2 cups boiling water

1 cup raw cashews
-
¾ cup room temp water
-
2 cloves garlic
For Dip
-
1 medium cucumber
-
Juice from 1 lemon
-
2 teaspoons Smith & Truslow Organic Lemon Dill

2 Tablespoons chopped fresh parsley
Directions
For the Cashew Cream
Pour boiling water over cashews and let rest for 30 minutes.
Meanwhile
Grate the cucumber and squeeze out as much excess liquid as possible using a clean towel.
After 30 minutes, drain and rinse cashews. Add to high speed blender with garlic and ¾ cup room temp water. Blend until emulsified.
Pour into a bowl and add cucumber, lemon juice and lemon dill seasoning and fresh parsley. Refrigerate for 30 minutes and serve.
