Chicken Salad with Lemon Dill Seasoning

Ingredients

  • 1 chicken, cut into 8 pieces

  • 2 Tablespoons olive oil

  • salt and pepper

  • ½ medium onion minced

  • 3 stalks of celery minced

  • ½ cup walnuts chopped

  • ¼ cup fresh parsley, minced

  • 3-4 Tablespoons Mayonaise

  • 2 teaspoons dijon mustard

  • 1 Tablespoon Lemon Dill Seasoning

  • Celery sea salt to taste

Directions

  1. Preheat oven to 425 degrees

  2. Using a paper towel, dry off chicken pieced and spread on a rimmed baking sheet.

  3. Top the chicken with olive oil and salt and pepper.

  4. Roast for 25-30 minutes until chicken temperature in 160 degrees. Remove from oven and let rest (the temp will continue to rise to 165 degrees.

  5. Let chicken cool and remove the skin and bones (save the bones to be used to make soup stock). Dice chicken into bite size pieces.

  6. While the chicken is cooking, dice the onion and celery and chop walnuts and parsley and place in a large mixing bowl.

  7. Add the chicken, mayo and dijon mustard and lemon dill seasoning and celery salt. Mix to combine and adjust seasonings to taste.
