Le Puys Lentils with Garlic and Thyme

Ingredients

3 tablespoons olive oil
- 1 onion, diced
- ¼ teaspoon minced garlic
- 1 carrot, peeled and diced
- 1 celery stalk, diced
- 2 ¼ cups French lentils
- 6 cups vegetable or chicken stock
- 1 bay leaf
- 1 teaspoon dried thyme
- 1 tablespoon kosher salt
- 1 tablespoon bourbon or scotch
Directions
Heat olive oil in a large sauce pan over medium heat.
Add onions and saute until tranlucent (5 minutes)
Add garlic, carrots, celery and saute for 5 more minutes.
Stir in French lentils and cook 1 more minute
Add chicken or vegetable stock and bay leaf and bring to a boil
reduce heat, add thyme and salt and simmer for 35 minutes
add a lttle more stock if all of the moisture is dried up.
add bourbon or scotch
cook 5 more minutes.
