Summer Garden Salad with Greek Seasoning

This summer garden salad is the scrumptious way to use some of your summer bounty – a big fresh tomato, cool cucumber, and crisp lettuce leaves. And, add whatever else you’ve got growing – snap peas, snow peas, peppers… Pick up some fresh mozzarella, and avocado oil, and you’re ready to slice up a sensationally easy and oh-so-yummy salad.

Ingredients
- 1 tomato, fresh off the vine
- Fresh mozzarella cheese
- 1 fresh cucumber
- Arugula or mixed greens
- 1 tablespoon avocado oil
- 1/2 teaspoon champagne vinegar
- 1/2 teaspoon fresh-squeezed lemon juice

1 teaspoon Greek Seasoning

1/2 teaspoon Celery Sea Salt
- Fresh-picked basil leaves, thinly sliced
- (If you want, add any other fresh-from-the-garden veggies you have!)
Directions
Slice tomato, mozzarella, and cucumber.
In a bowl, combine arugula, oil, vinegar, lemon juice, Greek seasoning, and celery salt.
Plate the dressed lettuce, and top with layered tomatoes, cucumbers, mozzarella, and basil.
Garnish with another dash of celery salt.
