Sweet and Spicy Nuts

Sweet and spicy! These are good by themselves, with a beer, or added to a salad. A strong cheese (gorganzola or feta), combine well with the sweet spiciness of the nuts to create a very tasty salad. I find I eat more greens when I have these nuts on hand. Go veggies!


Sweet and Spicy Nuts

Ingredients

  • 2 egg whites
  • 1 1/2 teaspoon fine sea salt

  • 1/2 cup honey
  • 1 Tablespoon molasses
  • 2 teaspoons Worcestershire sauce
  • 2 Tablespoons ground paprika

  • 1 1/2 teaspoons ground cayenne

  • 1 1/2 teaspoons ground cinnamon

  • 2 cups pecans
  • 2 cups blanched almonds
  • 2 cups cashews
  • 6 Tablespoons unsalted butter, melted

Directions

  1. Preheat oven to 325°.
  2. Beat egg whites with salt until foamy.
  3. Beat in honey, molasses, Worcestershire sauce, paprika, cayenne, and cinnamon.
  4. Stir in nuts and butter and spread in a large shallow baking pan. (Place foil or parchment paper on the pan first. It makes cleaning the pan a lot easier.)
  5. Bake nuts in oven, stirring every 10 minutes until crisp, about 30 minutes.  Spread nuts on a new sheet of foil and cool.
  6. Store in an air tight container at room temperature.
