Thai Chicken Noodle Soup

Ingredients

2 tablespoons olive oil

1 medium onion, minced

2 carrots, minced
-
2 stalks celery, minced

½ teaspoon organic garlic (or 2 cloves minced)

3 lbs of chicken meet, cut to bit size

2 teaspoons organic ground turmeric

1 teaspoon organic ground cayenne

1 cup coconut milk
-
8 cups stock, add more if the soup gets too thick
- 4 tablespoons lime juice

3 tablespoons crunchy peanut butter (I use 3-4)
- 2 cups thread egg noodles, broken into small pieces
- 2 tablespoons chopped scallions

4 tablespoons chopped fresh cilantro

2 teaspoons red pepper flakes
Directions
- Heat oil in large pan, add onion and sauté until translucent
- add carrots, celery, and garlic and saute for 3-4 minutes
- add chicken and spices and saute for 3-4 minutes
- add stock, coconut milk, lime juice, peanut butter, and egg noodles
- bring to a boil, reduce heat, cover pan and simmer for 15 minutes
- add cilantro and season to taste with salt and pepper.
