Cajun Spiced Three Potato Soup

Ingredients
- 2 tablespoons olive oil or butter
- 1 medium onion, diced
- 3 cloves garlic, minced

2 teaspoons Organic Cajun Spice
- Salt and pepper to taste
- 4 cups vegetable or chicken stock
- 2 cups milk
- 1 cup sharp cheddar cheese, grated
- 1/2 cup Greek yogurt
- 1 cup each of diced Yukon gold potatoes, red potatoes, and sweet potatoes

Toppings: thinly-sliced green onions or chives, extra shredded cheese, and sour cream
Directions
In a large pot, heat the olive oil or butter over medium heat.
Add the diced onion and garlic, and cook until the onion is translucent, about 5 minutes.
Stir in the Organic Cajun Spice
Gradually add the stock and milk, stir to combine.
Add the diced potatoes to the pot. Bring to a boil, then reduce the heat and let it simmer until the potatoes are tender (about 20 minutes).
Stir in the grated cheddar cheese and Greek yogurt until well combined and creamy.
Serve: Ladle the soup into bowls and top with green onions or chives and a sprinkle of cheese and Cajun Seasoning.
