Smith & Truslow Organic Ground Cardamom is USDA certified organic, freshly ground in small batches, and third-party tested for heavy metals β€” delivering the intensely aromatic, floral, citrusy, warmly sweet and slightly minty flavor that makes cardamom one of the most exotic, most beloved, and most culinarily transformative spices in Scandinavian, Middle Eastern, Indian, and modern American cooking.

Our organic cardamom is made from premium certified organic green cardamom pods β€” the seeds carefully extracted and groundΒ  to preserve their essential oils, pale green-gray color, and the extraordinary aromatic complexity that makes freshly ground cardamom so dramatically more alive and potent than the pre-ground cardamom that has been sitting in a grocery store jar for months. Whether you're baking a classic Scandinavian cardamom bun, brewing a traditional Middle Eastern cardamom coffee, building an Indian chai spice mix, making a creamy cardamom rice pudding, building an authentic garam masala from scratch, blending a warming golden milk, seasoning a Persian love cake, building a Moroccan ras el hanout, or simply adding the one spice that transforms a good dish into an unforgettable one, Smith & Truslow organic ground cardamom delivers a freshness, potency, and aromatic intensity that grocery store ground cardamom simply cannot match.

What Does Cardamom Taste Like β€” and Why Is It So Uniquely Addictive?

Cardamom is one of the most difficult spices to describe and one of the most immediately recognizable once tasted β€” a paradox that speaks to the extraordinary complexity of its aromatic profile. Ground cardamom delivers a flavor that is simultaneously floral and spicy, sweet and slightly minty, citrusy and warmly exotic β€” with a clean, almost eucalyptus-like freshness that cuts through rich, sweet, and fatty flavors in a way that no other spice can replicate. The dominant aromatic compound in cardamom is 1,8-cineole β€” also called eucalyptol β€” alongside alpha-terpinyl acetate and linalool, which together create the characteristic clean, floral, slightly camphorous intensity that makes cardamom so immediately distinctive. Unlike most warm spices, which deliver heat and sweetness, cardamom delivers something more elusive β€” a quality that is simultaneously warming and cooling, rich and clean, deeply exotic and somehow familiar. This unique aromatic character is why cardamom appears in both sweet and savory applications across dozens of culinary traditions β€” it enhances and elevates rather than dominates, adding a complexity and sophistication that makes everything it touches taste more interesting, more elegant, and more complete.

Cardamom Around the World β€” The Queen of Spices

After saffron and vanilla, cardamom is the third most expensive spice in the world by weight β€” and its global culinary reach reflects both its extraordinary flavor and the difficulty of its cultivation. Native to the forests of southern India, cardamom has been traded, revered, and used in cooking and medicine for thousands of years across a remarkable range of culinary traditions. In Scandinavia β€” particularly Sweden, Norway, and Finland β€” cardamom is arguably the single most important baking spice, essential to kardamommabullar (Swedish cardamom buns), pulla (Finnish sweet bread), and the warm, spiced flavor profile that defines Nordic baking. In the Middle East, cardamom is the defining flavoring of Arabic coffee β€” qahwa β€” the cardamom-spiced coffee that is an essential expression of hospitality across the Gulf states, Saudi Arabia, and the Levant. In India, cardamom is a cornerstone of chai masala, garam masala, and the spiced sweet preparations of South Asian dessert cooking β€” the warm, floral note that distinguishes an authentic Indian spice blend from an imitation. In Ethiopia, cardamom spices coffee in the traditional Ethiopian coffee ceremony β€” adding floral warmth to one of the world's oldest coffee rituals. In Iran and Persian cooking, cardamom appears in rice dishes, sweets, and the floral spice blends that characterize Persian cuisine's sophisticated, aromatic flavor philosophy.

Green Cardamom vs Black Cardamom β€” An Important Distinction

Cardamom comes in two main varieties β€” green cardamom and black cardamom β€” and the distinction between them is one of the most practically important and least understood facts in the spice world. Green cardamom β€” Elettaria cardamomum β€” is the variety used in virtually all baking, coffee, tea, and dessert applications and in most spice blends including chai masala and garam masala. It has the characteristic clean, floral, citrusy, slightly minty intensity that most people associate with cardamom flavor. Black cardamom β€” Amomum subulatum β€” is a completely different species from the same family, dried over fire to produce a smoky, camphor-like, earthy flavor that is fundamentally different from green cardamom's clean floral character. Black cardamom is used almost exclusively in Indian and Chinese savory cooking β€” particularly in biryani, slow-cooked meat dishes, and savory spice blends where its smoky intensity adds depth rather than floral brightness. The two are not interchangeable β€” using black cardamom in a cardamom bun or chai would produce a dramatically unpleasant result. Smith & Truslow Organic Ground Cardamom is green cardamom β€” the Elettaria cardamomum used in virtually every recipe that calls simply for "cardamom" without further specification.

Why Freshly Ground Cardamom Is Dramatically Superior

Of all the spices that benefit from freshness, cardamom may show the most dramatic improvement when ground fresh versus purchased pre-ground. The essential oils in cardamom β€” the compounds responsible for its extraordinary floral, citrusy, slightly minty character β€” are extraordinarily volatile, dissipating rapidly once the cardamom pod is opened or the seed is ground. Professional bakers and serious home cooks who use cardamom regularly know that there is simply no comparison between cardamom ground from whole pods immediately before use and pre-ground cardamom that has been in a jar for months β€” the difference in aroma, intensity, and flavor impact is immediate and profound. Smith & Truslow organic ground cardamom is ground fresh in small batches and sealed immediately to preserve its volatile essential oils at peak intensity β€” delivering the closest possible experience to freshly grinding your own cardamom pods, with the convenience of a pre-ground spice.

Why Our Organic Ground Cardamom Is Different

Most conventional ground cardamom is made from cardamom of uncertain provenance grown with synthetic pesticides, processed months before reaching your kitchen, and stored in ways that allow its extraordinarily volatile essential oils to dissipate through inadequate packaging. Given cardamom's position as the third most expensive spice in the world, adulteration is a significant and well-documented industry concern β€” some brands blend ground cardamom with cheaper spices, starch fillers, or lower-grade cardamom varieties to reduce costs at the expense of the authentic aromatic intensity that makes genuine cardamom so extraordinary. Not ours. Every lot of Smith & Truslow organic ground cardamom is made from 100% certified organic green cardamom with nothing added β€” no fillers, no anticaking agents, no irradiation β€” and tested by an accredited third-party lab against heavy metal specifications more stringent than industry standards. Pure cardamom. Maximum potency. Nothing hidden.

Storage and Shelf Life

Storage: To maximize freshness, store in a dark airtight container in a cool dry place. Once the spice is ground, flavor deteriorates with exposure to light, heat, air, humidity and time. Here are rules of thumb about the shelf life of spices and herbs >

NOTE: The plastic refill bags are not intended for long-term storage of your spices. Due to the porous nature of plastic, the essential oils that are released when a spice is ground, may react with the plastic and/or labelling inks over time.

Refill bags contain the same amount of spice as in our small glass jars. When they arrive, simply snip the corner of your bag, refill your original Smith & Truslow spice jar, apply the new label, and recycle the bag.

Product Testing

Certificates of analysis (COAs) accompany our products through the supply chain. COAs identify country of origin, certifications, best by dates, and information on product testing including microbial analysis and heavy metal testing.

If you would like to review the COA for the lot we are currently selling, please send an email to:Β customerservice@smithandtruslow.com.

As we only test ingredients, but not blends, we can only provide COA's on individual spices.
