Smith & Truslow Organic Lemon Peel is USDA certified organic and third-party tested for heavy metals β delivering the intensely bright, clean, citrusy flavor and fragrance of pure organic lemon zest in a convenient, shelf-stable form that delivers the vibrant lemon character of freshly grated lemon peel without the fresh lemons, the microplane, or the mess.
Our organic lemon peel is made from premium certified organic lemons β dried to preserve their essential oils, vibrant yellow color, and the concentrated citrusy brightness that makes lemon peel so much more aromatically intense and flavorful than lemon juice alone. Whether you're baking a classic lemon pound cake, building a bright lemon herb seasoning blend, finishing a pasta dish with citrusy freshness, flavoring a homemade limoncello, creating a Mediterranean spice blend, adding brightness to a dry rub, seasoning roasted fish or chicken, building a tea blend, or simply reaching for the ingredient that adds a clean, bright lemon note without adding moisture to a dish, Smith & Truslow organic lemon peel delivers a concentration, purity, and aromatic intensity that conventional dried lemon peel and fresh lemon juice used interchangeably simply cannot replicate.
Dried Lemon Peel vs Fresh Lemon Zest vs Lemon Juice β What's the Difference and When to Use Each
Dried lemon peel, fresh lemon zest, and lemon juice are three very different forms of lemon flavor β each with its own distinct character, intensity, and best application in the kitchen. Fresh lemon juice delivers bright, sharp, watery, highly acidic lemon flavor with significant moisture content β the right choice for dishes that need both acidity and liquid, such as vinaigrettes, sauces, and finishing squeezed over cooked proteins. Fresh lemon zest delivers concentrated, oil-rich, intensely citrusy aromatic flavor from the essential oils in the peel β with no acidity and no moisture β making it the right choice for baking and cooking where you want pure lemon fragrance and flavor without the sourness or liquid of juice. Dried lemon peel delivers the same essential oil-rich, aromatic lemon character as fresh zest β concentrated further by the drying process into a shelf-stable, measured form that is more consistent and more convenient than grating fresh zest every time. Use dried lemon peel in place of fresh lemon zest in any recipe β the general conversion is one teaspoon of dried lemon peel equals approximately one tablespoon of fresh lemon zest. For dry rubs, spice blends, baking mixes, and long-cooked dishes where fresh zest would be impractical or unavailable, dried lemon peel is the most practical and consistent choice.
Lemon Peel as a Culinary Ingredient β More Versatile Than You Think
Lemon peel is one of the most underused standalone spice ingredients in the American kitchen β largely because most home cooks think of it primarily as a component of spice blends rather than a standalone ingredient in its own right. But dried lemon peel is a genuinely versatile culinary ingredient with applications that span from baking to savory cooking to beverages to wellness preparations in ways that few other single ingredients can match. In baking it is essential to lemon-forward desserts β pound cake, lemon bars, lemon cookies, and lemon curd β where its concentrated essential oil character delivers more lemon intensity per teaspoon than any other form of lemon. In savory cooking it adds a bright citrusy note to fish, chicken, and pork preparations that is fundamentally different from the acidity of lemon juice β a dry, aromatic citrus brightness that enhances without acidifying. In spice blends it is the ingredient that makes a Mediterranean seasoning taste genuinely Mediterranean rather than generically herbal β the citrus note that distinguishes Greek seasoning, chermoula, and za'atar from herb blends without lemon. In beverages and tea blends it is a classic flavoring for herbal teas, chai variations, and wellness drink mixes. In wellness preparations it is a traditional ingredient in cleansing tonics, detox blends, and citrus wellness drinks. Understanding lemon peel as a standalone ingredient rather than just a blend component opens up an entirely new dimension of cooking possibility.
Lemon Peel in Mediterranean and Middle Eastern Cooking
Lemon peel has deep roots in Mediterranean and Middle Eastern cooking β appearing in the spice blends, marinades, and flavor preparations of Greek, Moroccan, Turkish, Lebanese, and Persian culinary traditions in ways that reveal its fundamental importance to these cuisines. In Greek cooking, lemon peel is a component of the citrusy herb profile that defines souvlaki marinades, Greek lemon potatoes, and the clean, bright flavor character that distinguishes Greek food from other Mediterranean traditions. In Moroccan cooking, dried lemon peel β or preserved lemon β is one of the most important ingredients in the pantry, appearing in chermoula marinades, slow-cooked tagines, and the preserved lemon preparations that are a cornerstone of Moroccan flavor. In Turkish and Middle Eastern cooking, lemon peel appears in spice blends, kebab marinades, and the bright, herb-forward preparations that characterize the fresh, vibrant flavors of the Eastern Mediterranean. In Persian cooking, dried lemon β called limu omani or dried lime β plays a similar role to dried lemon peel in souring and brightening slow-cooked stews, rice dishes, and braised preparations. Understanding lemon peel in its global culinary context reveals it not as a marginal baking ingredient but as a fundamental flavor component of some of the world's most celebrated and beloved cuisines.
Why Our Organic Lemon Peel Is Different
Most conventional dried lemon peel is made from conventionally grown lemons treated with synthetic pesticides and post-harvest fungicides β particularly concerning because lemon peel is the part of the fruit most likely to concentrate pesticide residues from both pre-harvest spraying and post-harvest waxing and treatment. Some cheaper brands blend dried lemon peel with citric acid, artificial lemon flavoring, and starch fillers to amplify a thin, low-quality lemon character that cannot stand on its own. Not ours. Every lot of Smith & Truslow organic lemon peel is made from 100% certified organic lemon zest with nothing added β no citric acid, no artificial flavoring, no fillers, no anticaking agents, no irradiation β and tested by an accredited third-party lab against heavy metal specifications more stringent than industry standards. Pure lemon peel. Concentrated citrus brightness. Nothing hidden.

Storage and Shelf Life
Storage and Shelf Life
Storage: To maximize freshness, store in a dark airtight container in a cool dry place. Once the spice is ground, flavor deteriorates with exposure to light, heat, air, humidity and time. Here are rules of thumb about the shelf life of spices and herbs >
NOTE: The plastic refill bags are not intended for long-term storage of your spices. Due to the porous nature of plastic, the essential oils that are released when a spice is ground, may react with the plastic and/or labelling inks over time.
Refill bags contain the same amount of spice as in our small glass jars. When they arrive, simply snip the corner of your bag, refill your original Smith & Truslow spice jar, apply the new label, and recycle the bag.
