3-4 Tablespoons olive oil
- 2 large onions, finely chopped
- 3 cloves garlic, minced
- 1 tablespoon ginger, minced
- 2 tablespoons berbere spice mix
- 1 cup red lentils, rinsed
- 1 can (14.5 oz) diced tomatoes
- 4 cups vegetable broth or water
- Salt to taste
- Fresh cilantro, chopped (for garnish)
Directions
Prepare the Onions: In a large pot, heat the olive oil over medium heat. Add the chopped onions and cook, stirring frequently, until they are caramelized and dark brown. This can take about 30-40 minutes.
Add Garlic and Ginger: Add the minced garlic and ginger to the onions and cook for another 5 minutes.
Add Berbere Spice: Stir in the berbere spice mix and cook for about 2-3 minutes until fragrant.
Add Lentils and Tomatoes: Add the rinsed lentils and diced tomatoes to the pot. Stir well to combine.
Add Broth: Pour in the vegetable broth or water. Bring to a boil, then reduce the heat and let it simmer.
Simmer: Cover the pot and let the stew simmer for about 30-40 minutes, or until the lentils are tender and the stew has thickened. Stir occasionally and add more broth if needed.
Season and Serve: Adjust the seasoning with salt to taste. Garnish with fresh cilantro before serving.
