Smith & Truslow Organic Berbere Spice Blend is USDA certified organic, freshly blended in small batches, and third-party tested for heavy metals โ€” delivering the bold, complex, deeply aromatic combination of smoked paprika, cayenne, applewood sea salt, onion, ginger, fenugreek, cardamom, coriander seed, garlic, nutmeg, clove, allspice, and cinnamon that makes berbere one of the most extraordinary, most culturally significant, and most genuinely exciting spice blends in the entire global culinary tradition.

Our organic berbere spice blend is a carefully crafted blend of fourteen certified organic ingredients โ€” each one individually sourced, ground and blended in precisely calibrated proportions to deliver the layered, complex, simultaneously fiery and warmly aromatic character that distinguishes an authentic, well-made berbere.ย  Whether you're building a classic Ethiopian doro wat โ€” the slow-braised chicken stew that is arguably the most celebrated dish in East African cooking โ€” seasoning a lamb tibs, building a berbere-spiced lentil dish, flavoring a vegetarian misir wot, creating a berbere dry rub for grilled meats, building a berbere-spiced roasted vegetable preparation, seasoning a berbere-inspired chili, adding the extraordinary depth and complexity of East African spicing to a slow-cooked beef preparation, or simply reaching for the blend that delivers one of the world's most complex and most rewarding flavor experiences in a single pinch, Smith & Truslow Organic Berbere Spice Blend delivers a freshness, complexity, and aromatic depth that no grocery store berbere blend โ€” and very few specialty spice brands โ€” can match.

What Is Berbere โ€” and Why Is It One of the World's Great Spice Blends?

Berbere is the defining spice blend of Ethiopian and Eritrean cooking โ€” a preparation so fundamental to the flavor identity of these two East African cuisines that it is impossible to imagine the food without it. The word berbere comes from the Amharic language and refers both to the blend itself and to the chili peppers that form its heat foundation โ€” a duality that reflects how deeply embedded this preparation is in the culinary and cultural identity of the Ethiopian Highlands. Berbere is not merely a spice blend โ€” it is a culinary philosophy, a cultural expression, and a genuinely ancient preparation that has been refined over centuries in one of the oldest continuous culinary traditions in the world. Ethiopian cooking predates the introduction of chili peppers to Africa โ€” meaning berbere in its earliest forms used long pepper and other indigenous heat sources before cayenne became available โ€” and the blend has evolved over generations into one of the most complex, most aromatic, and most carefully calibrated spice preparations in any culinary tradition. What distinguishes berbere from every other warm spice blend in the world is its extraordinary complexity โ€” the simultaneous presence of fiery heat from cayenne, the deep smokiness of smoked paprika, the warming sweetness of cinnamon and allspice, the floral brightness of cardamom, the earthy depth of fenugreek and coriander, the savory foundation of garlic and onion, and the intense aromatic complexity of clove and nutmeg โ€” all working together in a harmony that takes the palate through multiple flavor dimensions simultaneously. Great berbere is not merely hot โ€” it is complex, warming, aromatic, slightly sweet, deeply savory, and utterly unlike anything else in the global spice tradition.

The Fourteen Ingredients of Smith & Truslow Organic Berbere โ€” Why Each One Is Essential

Understanding what each of the fourteen ingredients in Smith & Truslow Organic Berbere Spice Blend contributes reveals why this blend delivers such extraordinary complexity and why every ingredient is genuinely necessary. Smoked paprika provides the deep, oak-fired smokiness and brilliant red color that give berbere its characteristic visual impact and smoky aromatic foundation โ€” an ingredient that in authentic Ethiopian cooking is approximated by the slow toasting of dried chilies over an open flame. Cayenne delivers the primary heat โ€” the bright, penetrating, fiery intensity that is the defining characteristic of authentic berbere and the ingredient that makes it genuinely exciting rather than merely warm. Applewood sea salt adds a subtly smoky mineral foundation that deepens the smoked paprika's oak character and adds a distinctly American artisanal dimension to a blend that honors its Ethiopian heritage while reflecting Smith & Truslow's Colorado provenance. Fenugreek is the most uniquely characteristic ingredient in berbere โ€” its slightly bitter, maple-like, subtly sweet flavor note is what makes berbere taste unmistakably like berbere rather than like any other warm spice blend, and its absence is immediately apparent to anyone who knows the authentic preparation. Cardamom adds the clean, floral, slightly minty aromatic brightness that lifts the entire blend and provides the same sophisticated aromatic top note it contributes to garam masala and Arabic coffee. Coriander seed adds the warm, citrusy, slightly nutty complexity that complements the earthier spices and adds the rounded, approachable warmth that prevents the blend from being merely fiery. Ginger adds the bright, citrusy, slightly sharp warming heat that connects the blend's sweet and savory elements and adds the characteristic warmth that is a defining feature of East African spicing. Cinnamon adds the warm, sweet, woody depth that provides the counterpoint to the blend's heat โ€” the ingredient that makes berbere work equally well in slow-cooked stews and in preparations where you want warmth rather than pure heat. Allspice adds the complex, simultaneously clove-like, cinnamon-sweet, and peppery warmth that adds another layer of aromatic complexity and contributes the rounded, slightly fruity warmth that distinguishes a great berbere from a merely hot chili blend. Clove adds the most intensely aromatic element โ€” its powerful eugenol character contributing a deep, slightly numbing warmth in very small amounts that adds extraordinary complexity without dominating the blend. Nutmeg adds warm, slightly sweet, woody depth that rounds the blend and adds the background richness that makes berbere so deeply satisfying in slow-cooked preparations. Garlic and onion provide the savory, umami-rich foundation that grounds every other aromatic element and makes berbere work as well in a slow-braised stew as it does in a dry rub.

Berbere in Ethiopian and East African Cooking โ€” A Culinary Cornerstone

Berbere is to Ethiopian cooking what garam masala is to Indian cooking, what ras el hanout is to Moroccan cooking, and what Chinese five spice is to Cantonese cooking โ€” the defining, most celebrated, and most culturally essential spice blend of its culinary tradition. In Ethiopian cooking berbere is used in two primary ways that together cover an extraordinary range of preparations. The first is as a dry spice blend โ€” rubbed onto meats before grilling or roasting, added to dry spice preparations, and used as the seasoning foundation for the slow-cooked stews called wots and alicha that are the backbone of Ethiopian cuisine. The second and most important application is as the foundation of nit'ir qibe โ€” the Ethiopian spiced clarified butter made by slowly infusing berbere and other aromatics into clarified butter โ€” which is the cooking fat that gives Ethiopian wots their characteristic flavor and is one of the most distinctive and most celebrated culinary preparations in East African cooking. Berbere seasons doro wat โ€” the slow-braised whole chicken legs and hard-boiled eggs in berbere-spiced sauce that is the most celebrated and most ceremonially significant dish in Ethiopian cooking, traditionally prepared for holidays and honored guests. It seasons misir wot โ€” the red lentil stew that is one of the most satisfying and most nutritionally complete vegetarian preparations in any culinary tradition. It flavors key wot โ€” beef braised in berbere and nit'ir qibe until the sauce is thick, rich, and deeply complex. And it seasons tibs โ€” the pan-fried meat preparations that are among the most popular everyday dishes in Ethiopian restaurants worldwide.

Berbere Beyond Ethiopian Cooking โ€” Global Fusion Applications

While berbere's most authentic and most rewarding applications are in traditional Ethiopian cooking, its extraordinary flavor complexity makes it one of the most exciting and most versatile fusion seasoning blends available to any adventurous home cook willing to explore beyond its cultural origins. Berbere-spiced roasted lamb delivers a depth and complexity that makes it simultaneously familiar and exotic โ€” the warm spices reminiscent of Middle Eastern cooking but the specific combination unmistakably East African. Berbere dry-rubbed grilled chicken creates a preparation with the visual drama of a deep red spice crust and the aromatic complexity of fourteen carefully chosen organic spices working in perfect harmony. Berbere-spiced roasted cauliflower, carrots, and sweet potatoes delivers a depth of flavor that makes these simple vegetables genuinely extraordinary and introduces the flavors of East Africa to any diner willing to try something genuinely new. Berbere-inspired chili โ€” substituting or supplementing traditional chili powder with berbere โ€” delivers a complexity and warmth that elevates the most familiar American comfort food into something genuinely sophisticated. Berbere compound butter โ€” mixed into softened organic butter and chilled โ€” creates one of the most flavorful and most versatile finishing preparations imaginable, equally at home melted over a grilled steak, tossed with pasta, or spread on warm flatbread.

Storage and Shelf Life

Storage: To maximize freshness, store in a dark airtight container in a cool dry place. Once the spice is ground, flavor deteriorates with exposure to light, heat, air, humidity and time. Here are rules of thumb about the shelf life of spices and herbs >

NOTE: The plastic refill bags are not intended for long-term storage of your spices. Due to the porous nature of plastic, the essential oils that are released when a spice is ground, may react with the plastic and/or labelling inks over time.

Refill bags contain the same amount of spice as in our small glass jars. When they arrive, simply snip the corner of your bag, refill your original Smith & Truslow spice jar, apply the new label, and recycle the bag.

Product Testing

Certificates of analysis (COAs) accompany our products through the supply chain. COAs identify country of origin, certifications, best by dates, and information on product testing including microbial analysis and heavy metal testing.

If you would like to review the COA for the lot we are currently selling, please send an email to:ย customerservice@smithandtruslow.com.

As we only test ingredients, but not blends, we can only provide COA's on individual spices.
