Built for fish, and it works on sweet potatoes for the same reason: coriander's citrus brightness cuts through richness whether that richness comes from salmon fat or a caramelized root vegetable. Fennel adds sweetness, oregano brings a Mediterranean edge, red pepper flakes add a little heat at the finish.
