Cauliflower, Sweet Potato and Brussels Sprout Wrap with Green Veggie Sauce

This wrap is loaded with texture and flavor. This is an excellent way to increase your veggie consumption. Once the sauce is made and in the fridge, you can use it to top any veggie, but this combo is my favorite!

Ingredients

olive oil
-
½ sweet potato, diced small
-
3-6 Cauliflower florets, chopped to bite size pieces
-
4-6 Brussels Sprouts, sliced thin
-
2 Tablespoons chopped walnuts
-
2 tortilla wraps or pitas
-
Tablespoon of Green Veggie Sauce
Directions
heat oil in large saucepan
sauted sweet potatoes for 6 minutes
add cauliflower and saute until it begins to soften
add brussels sprouts and sauted for 3 more minutes
stir in walnuts and cook 2 more minutes
spoon over warm tortilla
add a dollop of green veggie sauce
