When I lived in Chicago, I became addicted to ribs. I never realized how good they were until I tried the ribs at Twin Anchors, a bar on Sedgwick just north of North Avenue. The meat is so tender it falls off the bone, and whenever I return, I always plan time for a nostalgic trip to my old favorite haunt. This recipe is nothing like the ribs at Twin Anchors, but it's mighty tasty and satisfies my hankering between trips. Meaty country-style ribs are slow-baked in a tangy sauce of ketchup, balsamic vinegar and our organic Coriander Cumin Rub until fork-tender, with just 5 minutes of prep.

Preheat the oven to 300°F.
Mix the ketchup, balsamic vinegar and Coriander Cumin Rub. Set aside 1/4 cup of the sauce for basting.
Arrange the ribs in a single layer in a baking dish and spread the remaining sauce over them.
Cover tightly with foil and bake for 1 1/2 hours. Uncover, brush with the reserved sauce and bake 30 minutes more, until fork-tender and caramelized.
Slow cooker option: cook on low for 4-5 hours instead of baking.
