Easy Tuscan Soup

Ingredients
- 1 pound Italian sausage
- ½ onion, finely chopped

½ teaspoon garlic minced
- 1 cup dry white wine

4 medium Yukon gold potatoes, diced
- 8 cups chicken broth

2 teaspoons salt

2 teaspoons pepper
- 1 Tablespoon Italian seasoning
- 2 cups sliced mushrooms
- 4 cups roughly chopped kale
- 3/4 cups heavy whipping cream
- 2 teaspoons red pepper flakes
Directions
- Cook the sausage in a large stock pot until browned.
- Remove the sausage from the pot and then cook the onions in the grease from the sausage. Cook until translucent.
- Add the garlic and cook for 1-2 more minutes.
- Add the wine to deglaze the pan, simmer for 5 minutes.
- Add the chicken stock and the potatoes and bring to a boil. Cook until potatoes soften approximately 15 minutes.
- Add the salt, pepper, Italian seasoning mushrooms and sausage. Cook for 5 minutes.
- Add the kale and stir until the kale wilts.
- Add cream and stir to combine.
- Ladle to soup bowls and then top with Parmesan and a sprinkle of red pepper flakes.
