Baba Ganoush with Za atar and Paanch Phoran

This recipe is a relatively simple palette, so your spices are going to stand out. You can always experiment w/ depth of flavor by adding your favorite chili peppers or herbs.

Baba Ganoush with Za atar and Paanch Phoran

Ingredients

  • 2 medium sized Italian eggplants

  • 2 Tablespoons olive oil (for coating raw eggplants)

  • ¼ cup olive oil

  • 2-6 cloves of garlic (follow your heart), minced

  • 2 tablespoons lemon juice

  • ¼ cup tahini

  • 1 teaspoon Paanch Phoran Seasoning

  • 1 teaspoon Za’atar Seasoning

  • Salt & pepper to taste

  • ¼ cup chopped fresh parsley

Directions

  1. Preheat oven to 450 degrees.

  2. Cut the eggplants in half lengthwise then brush with olive oil. Place face down on a greased baking sheet.

  3. Roast the eggplant until tender - 30 to 45 minutes, but you will have to check based on the size of the eggplants. Set aside to cool.

  4. When cool, skin the eggplants. Extract moisture from the skinned eggplants by suspending a colander over a smaller bowl & pressing down on the eggplants with paper towels until the paper towels come back dry.

  5. Once you’ve removed the liquid from the eggplant, pour the pulp into a clean bowl & add garlic & lemon juice. Mix together until incorporated, then add tahini & olive oil & mix again.

  6. Mix in the Za’atar and Phaanch Phoran. Top w/ parsley & serve.

Why use Paanch Phoran
Seasoning from Smith and Truslow?

Paanch Phoran (translating literally to five spice blend) is a blend of mustard, black caraway, cumin, fennel and fenugreek that results in a bold somewhat bitter flavor, with just the slightest hint of licorice from the fennel. This blend is used in Eastern India and Bangladesh as a rub for meats, or added to Indian stews, sprinkled on vegetables. It is a delicious addition to naan bread. And, we have found it works nicely on fish and cauliflower.
