Most all-purpose rubs lean smoky or earthy. This one leans bright — lemon peel and white pepper up front, instead of the usual paprika-and-garlic default. That's what makes it work on delicate things like fish and chicken instead of just overpowering them the way a heavier rub would.

Seven organic spices and sea salt: lemon peel, white pepper, onion, garlic, paprika, ginger, yellow mustard, and sea salt.

Good on salmon before it hits the pan, rubbed onto a whole chicken, on roasted vegetables that need lifting rather than weighing down.
