There are two cinnamons, and most people have only ever had one. Cassia is the loud one — bold, everywhere, the cinnamon of your childhood. Ceylon is quieter. Sweeter in a different way. True cinnamon, if you want to get technical about it, and worth knowing the difference.
There's a health reason too, not just a flavor one. Cassia carries more coumarin, a compound that in high doses isn't kind to your liver. Ceylon carries almost none. If you eat cinnamon daily — and some people do — that difference actually matters.
We source ours from Sri Lanka. Certified organic. Tested against limits stricter than the industry sets for itself, because cinnamon is one of the spices most likely to be hiding something it shouldn't.
