Smith & Truslow Organic Mile High Steak Rub is USDA certified organic, freshly blended in small batches, and third-party tested for heavy metals โ€” delivering the bold, complex, deeply savory combination of garlic, black pepper, dill seed, coriander seed, smoked paprika, and red pepper flakes that makes this blend one of the most distinctive, authentically crafted, and genuinely exciting steak rubs available anywhere.

Our organic Mile High Steak Rub is a carefully crafted blend of seven ingredients โ€” each one certified organic, individually sourced, and blended in precisely calibrated proportions to deliver a flavor profile that is simultaneously bold and complex, smoky and citrusy, with the deep savory foundation of garlic and black pepper, the aromatic lift of dill seed and coriander seed, the rich smokiness of smoked paprika, and the bright, lingering heat of red pepper flakes โ€” a combination that creates a crust on grilled or seared steak that is nothing short of extraordinary. Whether you're grilling a ribeye over high heat, reverse-searing a thick-cut New York strip, cooking a tri-tip for a weekend cookout, seasoning a flank steak for tacos, building a compound butter for a steakhouse-worthy finish, or simply reaching for the one rub that makes every steak the best steak you have ever made, Smith & Truslow Organic Mile High Steak Rub delivers a complexity, depth, and crust-building power that no grocery store steak seasoning can replicate.

What Makes Mile High Steak Rub Different โ€” The Flavor Architecture

Every great steak rub has a flavor architecture โ€” a carefully considered hierarchy of ingredients where each component plays a specific and irreplaceable role in the overall flavor and texture experience. Understanding the Mile High Steak Rub's flavor architecture reveals why this particular combination of seven ingredients delivers such an extraordinary result on beef. Garlic and black pepper form the savory foundation โ€” two ingredients so fundamental to the flavor of great steak that their combination is essentially the definition of classic steakhouse seasoning, delivering the deep umami amplification and sharp aromatic heat that make beef taste more like itself. Smoked paprika adds the deep, oak-fired smokiness that evokes a wood-fired grill on any cooking surface โ€” building the rich, slightly sweet red pepper base that gives the crust its beautiful color and smoky depth. Dill seed and coriander seed are the surprise ingredients โ€” the element that makes this rub genuinely distinctive rather than just another garlic-pepper blend. Dill seed's clean, slightly anise-like, citrusy warmth and coriander seed's bright, lemony, nutty complexity work together to add an aromatic lift and freshness that cuts through beef's richness and makes every bite taste more dynamic and interesting. Red pepper flakes add the visible heat โ€” the slow-building, slightly fruity chili warmth that lingers on the finish and makes you want another bite immediately. Sea salt anchors the entire blend โ€” drawing moisture to the surface during a dry brine, forming the crust that every great steak demands.

The Colorado Inspiration โ€” Why This Rub Is Called Mile High

Smith & Truslow is a Colorado company โ€” based a mile above sea level in the Rocky Mountain region where the steak culture runs deep, the grilling season is year-round, and the expectation for what a great steak should taste like is genuinely high. The Mile High Steak Rub was built to meet those expectations โ€” a blend designed for the serious steak cook who wants something more interesting than salt and pepper but more focused and purposeful than a generic all-purpose seasoning blend. The name is a statement of origin and aspiration โ€” this is a steak rub built by people who take their beef seriously, in a state that has been beef country since the days of the great cattle drives, seasoned with organic ingredients that meet the strictest standards of purity and quality available anywhere. When you reach for the Mile High Steak Rub, you are reaching for a piece of Colorado cooking culture โ€” one that believes the best steak is always the one made with the best ingredients.

How to Dry Brine with Mile High Steak Rub โ€” The Technique That Changes Everything

The most important technique for getting maximum performance from Mile High Steak Rub is dry brining โ€” applying the rub generously to the steak and letting it rest uncovered in the refrigerator for at least one hour and ideally overnight before cooking. The sea salt in the rub draws moisture to the surface of the steak through osmosis, which then dissolves the salt and some of the spice compounds into a concentrated brine that is reabsorbed into the meat โ€” seasoning the steak from the inside rather than just the outside, and concentrating the flavors of garlic, smoked paprika, and pepper deep into the muscle fibers. Simultaneously, the dry surface that develops during the refrigerator rest allows for dramatically better Maillard browning when the steak hits a hot pan or grill โ€” creating a darker, crispier, more deeply flavored crust than a steak seasoned immediately before cooking can ever achieve. For a one-inch steak, one hour of dry brining delivers a noticeable improvement. For a thick-cut two-inch steak, overnight dry brining is transformative โ€” producing a steak with the seasoning depth and crust quality of a professional steakhouse preparation.

Why Our Organic Mile High Steak Rub Is Different

Most grocery store steak rubs are made from the lowest-quality commodity spices available โ€” grown with synthetic pesticides, irradiated to extend shelf life, and padded with anticaking agents, excessive salt, and artificial flavoring that deliver a flat, generic seasoning rather than a genuinely complex flavor experience. Many popular steak rubs rely primarily on salt and sugar as the primary ingredients โ€” using sweetness to simulate the Maillard browning that proper technique and quality spices achieve without shortcuts. Not ours. Every lot of Smith & Truslow Organic Mile High Steak Rub starts with certified organic versions of every ingredient in the blend โ€” organic garlic, organic black pepper, organic dill seed, organic coriander seed, organic smoked paprika, and organic red pepper flakes, balanced with pure sea salt โ€” with nothing added. No artificial flavoring. No anticaking agents. No irradiation. No sugar. Third-party tested for heavy metals. Pure blend. Maximum crust. Nothing hidden.

Storage and Shelf Life

Storage: To maximize freshness, store in a dark airtight container in a cool dry place. Once the spice is ground, flavor deteriorates with exposure to light, heat, air, humidity and time. Here are rules of thumb about the shelf life of spices and herbs >

NOTE: The plastic refill bags are not intended for long-term storage of your spices. Due to the porous nature of plastic, the essential oils that are released when a spice is ground, may react with the plastic and/or labelling inks over time.

Refill bags contain the same amount of spice as in our small glass jars. When they arrive, simply snip the corner of your bag, refill your original Smith & Truslow spice jar, apply the new label, and recycle the bag.

Product Testing

Certificates of analysis (COAs) accompany our products through the supply chain. COAs identify country of origin, certifications, best by dates, and information on product testing including microbial analysis and heavy metal testing.

If you would like to review the COA for the lot we are currently selling, please send an email to:ย customerservice@smithandtruslow.com.

As we only test ingredients, but not blends, we can only provide COA's on individual spices.
