Storage
Once a spice is ground, flavor deteriorates with exposure to light, heat, air, humidity and time. For maximum freshness, store in dark airtight container in cool dry place.
Cuisines

African - Originally cultivated in the Cayenne district of French Guiana, cayenne peppers are commercially cultivated all over the world with Mexico, China and East African being leading producers. You will find cayenne in many East African curry based stews.

Cajun & Creole - Cayenne is a key ingredient in Cajun Spice blends, and used liberally in Jambalaya.

Mexican - Cayenne pepper is probably most well known for its role in Mexican cooking – in spicy sauces, meat marinades, and in enchiladas, tacos and fajitas.

Spanish - While not used heavy-handedly in Spanish cooking, cayenne is an essential ingredient in paella, and lends its red color to Spanish rice and many other recipes.

Product Testing

In response to concerns over food safety, many in the spice industry are taking measures to provide you with the information you seek. While testing has always been conducted, certificates of analysis (COAs) are now accompanying most products through the supply chain. COAs identify country of origin, certifications, best by dates, and information on product testing.

As of August 2022, Smith & Truslow spice jar labels have “best by” dates (as opposed to “packaged on” dates), and include lot numbers that correspond to the COA for the enclosed spice or herb. If you would like to review the COA for the lot we are currently selling, or for one that you have already purchased, please send an email to: customerservice@smithandtruslow.com. Be sure to indicate 1) the spice name, and 2) the lot number, and we’ll respond with a PDF of the COA, as is available.
