Spiced Apple Cake

Ingredients

    • 2 cups all-purpose flour
    • 1 teaspoon baking powder
    • 1/2 teaspoon salt
    • 2 teaspoons ground cinnamon

    • 1/2 teaspoon ground ginger

    • 1/4 teaspoon nutmeg

    • 1/2 cup melted butter
    • 3/4 cup brown sugar
    • 2 large eggs
    • 1 teaspoon vanilla extract
    • 3/4 cup milk
    • 3 medium apples, peeled and diced

    • 1 cup powdered sugar
    • 3-4 tablespoons milk or apple juice
    • 1/2 teaspoon vanilla extract

    Directions

    1. Preheat oven to 350°F (175°C). Grease a 9-inch cake pan.

    2. Mix dry ingredients in a large bowl: flour, baking powder, salt, cinnamon, ginger, and nutmeg.

    3. Combine wet ingredients in another bowl: melted butter, brown sugar, eggs, vanilla, and milk. Whisk until smooth.

    4. Make the batter by pouring wet ingredients into dry ingredients. Stir just until combined - don't overmix.

    5. Fold in apples gently until evenly distributed.

    6. Bake by pouring batter into prepared pan and baking for 45 minutes, or until a toothpick inserted in center comes out clean.

    7. Cool completely in pan before removing.

    8. Make glaze by whisking powdered sugar, milk, and vanilla until smooth. Drizzle over cooled cake.

    9. Serve at room temperature. Store covered for up to 3 days.
