1.Mix olive oil, vinegar and Berbere Spice and pour over chicken in zip-lock bag.
2.Seal bag closed, and massage the chicken until the marinade is evenly distributed and worked into the chicken.
3.Let sit for 20 minutes.
4.Preheat oven or grill to 400°.
5.If roasting, place chicken breasts in glass baking pan. Cook 10-12 minutes each side, depending on thickness. When cooked, internal heat should be 165° – when cut, meat is no longer pink).
6.If grilling, cook for 6-7 minutes on each side, until cooked fully through.
7.Serve with fresh vegetables, or a more traditional side of Ethiopian lentils.
