Berbere Spiced Chicken

Add a little Ethiopian spice to your day with Berbere Spiced Chicken. This is the simplest of simple recipes that brings on a spicy complex flavor.

Instructions

  • 1.Mix olive oil, vinegar and Berbere Spice and pour over chicken in zip-lock bag.
  • 2.Seal bag closed, and massage the chicken until the marinade is evenly distributed and worked into the chicken.
  • 3.Let sit for 20 minutes.
  • 4.Preheat oven or grill to 400°.
  • 5.If roasting, place chicken breasts in glass baking pan. Cook 10-12 minutes each side, depending on thickness. When cooked, internal heat should be 165° – when cut, meat is no longer pink).
  • 6.If grilling, cook for 6-7 minutes on each side, until cooked fully through.
  • 7.Serve with fresh vegetables, or a more traditional side of Ethiopian lentils.

  • 2 tablespoons olive oil
  • 1 teaspoon red wine vinegar
  • 1 tablespoon Organic Berbere Spice
  • 1 zip-lock bag
