“MFA Chicken Salad” with Dried Cranberries and Red Onion

Beyond the art, one of the lures to the Boston MFA is lunch in the cafe and their signature chicken salad rollup. It’s not just plain old chicken salad. It’s got a garlicky sweet tarragon aioli that melds the sweet and sharp ingredients – dried cranberries, red onion and celery.

Instructions

  • 1.Combine chicken, celery, red onion, dried cranberries in a bowl.
  • 2.Add 1/2 cup of tarragon aioli. Mix thoroughly. Add more dressing if desired.
  • 3.Season with salt and pepper, to taste.
  • 4.Refrigerate mixture for 1/2 hour before serving.
  • 5.Roll in wrap with lettuce and tomato.

  • Grilled or roasted chicken, shredded (about 3 cups)
  • 1 stalk celery, chopped
  • 1/2 red onion, chopped (about 1/4 cup)
  • 1/3 cup dried cranberries
  • Sweet tarragon aioli (see recipe)
  • Sea salt and organic fresh ground pepper, to taste
  • Green leaf lettuce
  • Tomato
  • Sandwich wrap
