Cajun Shrimp in Tomato Sauce

This simple to make meal is packed with spice and flavor. Only one pan to wash and marries will with either rice, pasta, or polenta.
Ingredients

1 Yellow Onion, diced

3 Tablespoons Olive Oil

1 Red Bell Pepper, sliced
-
1 Yellow Bell Pepper, sliced
-
8 garlic cloves
-
2 Tablespoons Organic Cajun Spice
-
1 teaspoon Oregano
-
1 14 oz can diced tomatoes
-
1 ½ lbs peeled, deveined shrimp
-
2 scallions sliced
-
½ cup Parmesan cheese
-
salt and pepper to taste
Directions
Saute onions in olive oil until translucent, 7-8 miuntes.
Add peppers and garlic and saute until tender, 3-4 minutes.
Stir in Organic Cajun Spice and Organic Oregano.
Add diced tomatoes and bring to a simmer and cook for 5 minutes.
Add shrimp and cook until just past translucent, pink and still opaque (3-4 minutes).
Top with scallions, Parmesan cheese and serve over rice or pasta.
