Cajun Red Beans and Rice

Ingredients
- 1 pound dried red kidney beans
- 1 large onion, chopped
- 1 green bell pepper, chopped
- 3 celery stalks, chopped
- 3 cloves garlic, minced
- 1 pound Andouille sausage, sliced
- 1 ham hock or 1/2 pound diced ham
- 2 bay leaves

1 Tablespoon Organic Cajun Spice
- 1 teaspoon dried oregano
- 1/2 teaspoon cayenne pepper (optional)
- 6 cups water or chicken broth
- Salt and pepper to taste
- Cooked white rice
- Chopped green onions and hot sauce for serving
Directions
In a pressure cooker pot, sauté the onion, bell pepper, celery, and garlic until they are soft.
Add the Andouille sausage and ham hock (or diced ham) to the pot and cook for a few minutes.
Add the beans, bay leaves, Organic Cajun Spice and water or chicken broth to the pot.
Cover and cook in pressure cooker for 20-30 minutes. If they aren’t tender, cook them for 10 more minutes
Remove from heat and allow pressure to dissapate.
Remove the bay leaves and season with salt and pepper to taste.
Serve the red beans over cooked white rice. Garnish with chopped green onions and a splash of hot sauce if desired.
