Berbere Roasted Potatoes

These Berbere Roasted Potatoes are perfect alongside grilled meats, fish, or as part of a vegetarian meal.
This recipe works well with sweet potatoes also.
Ingredients

2 lbs potatoes (Yukon gold or sweet potatoes), diced
- 2 tablespoons olive oil
- 2 cloves garlic, minced

1 tablespoon Organic Berbere Spice
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 2 tablespoons lemon juice
- Fresh parsley, chopped (for garnish)
Directions
Preheat Oven: Preheat your oven to 400°F
Prepare Potatoes: Place the diced potatoes in a large bowl.
Make the Spice Mixture: In a small bowl, combine the olive oil, minced garlic, berbere spice mix, salt, pepper, and lemon juice. Mix well to form a paste.
Coat Potatoes: Pour the spice mixture over the potatoes and toss until all the pieces are evenly coated.
Roast: Spread the coated potatoes in a single layer on a baking sheet. Roast in the preheated oven for about 30-35 minutes, or until the potatoes are golden brown and crispy, stirring halfway through to ensure even cooking.
Serve: Remove from the oven and garnish with fresh parsley. Serve hot as a side dish.
