Cajun Spiced Roasted Chickpeas

These spiced roasted chickpeas are the perfect little snack when you need a little something during cocktail hour. These versatile legumes roast up nicely with Smith & Truslow Organic Southwest Spice blend.
Ingredients
- 2 15-ounce cans chickpeas (garbanzo beans), thoroughly drained and rinsed (about 3 cups)
- 2 tablespoons olive oil

1 tablespoon Smith & Truslow Organic Cajun Spice*
Directions
Preheat oven to 400°F and set rack in the middle of your oven.
Place chickpeas in a large bowl and toss with oil and spice until evenly coated.
Spread chickpeas in an even layer on a rimmed baking sheet. Bake until crisp, about 35 to 40 minutes, stirring about halfway through.
Cool to room temperature and serve.
